Why We Bake

The Heart of AFBC

No child should have to miss out on cupcakes at a birthday party because they have an allergy. And no one should have to start their day with a crumbly, dry bagel that tastes reminiscent of cardboard. These simple truths inspired the creation of Allergy Free Baking Company.

From the beginning, our founder loved crafting healthy, delicious treats. When she saw how limited the options were for people with food allergies, she poured her passion into developing bakery items that were free from common allergens while still being full of flavor and joy. With her knowledge of wholesome alternatives and love of baking, she proved that allergy-friendly bakery treats could be just as indulgent and delightful as any traditional bakery.

Elizabeth, AFBC’s current owner, had a similar experience. She joined the team in 2022 and quickly embraced the bakery’s mission. When the founder was ready for her next chapter in 2023, she passed the torch to Elizabeth, who, with her husband Chris, is honored to continue the tradition of baking joyfully and safely for everyone.

Because we are a dairy-free bakery, many items contain some form of coconut. We use coconut oil and milk in many of our products. Items that DO NOT contain coconut are breads such as sandwich bread, bagels, soft pretzels, buns, etc. Most sweet baked goods contain some form of coconut; however, please ask our staff for specific recommendations to avoid coconut.

All products without frosting or powdered sugar are corn-free except the Sugar Cookie Cutouts and Gingerbread Men, which have powdered sugar in the dry mix. AFBC uses homemade corn-free baking powder and arrowroot as a thickener for jams/fillings.

No Dyes here! We use all-natural colors in our recipes. Even our icing is dye-free. Sprinkles are natural colors and well.

We offer a wide variety of goodies that are egg-free. If you come into our bakery, you will see lots of purple utensils, tools, pans, and equipment. These items do not come in contact with eggs. We also have a separate mixer dedicated to egg-free baked goods to ensure no cross-contamination.

All of our products are gluten-free!

If you have a gluten allergy or celiac disease, we have you covered. Our kitchen and bakery are completely gluten-free. Our main flour blend consists of sorghum flour, brown rice flour, sweet white rice flour and tapioca flour.

No nuts for us! We are a nut-free facility and one of the only bakeries in the Denver metro area that can offer a safe environment for those with nut allergies.

The Everything Bagels are the only product that contains sesame. When we make the Everything Bagels, the oven is used only for the Everything Bagels and nothing else. We also use the very bottom racks of the speed racks when cooling the bagels, so that sesame doesn’t accidentally fall on other products.  We sanitize all utensils and pans used for Everything Bagels after baking.

All AFBC products are 100% soy-free.

Although many customers with a soy allergy can tolerate soy lecithin, our bakery now uses chocolate chips with NO soy lecithin. Even our baking spray is soy-free!

No. All products at Allergy Free Baking Company contain sugar (white, brown, or powdered).

We use standard white, brown, and powdered sugar in our recipes, which may be processed using bone char. For this reason, our products may not meet the definition of veganism for those who avoid this type of sugar. If your veganism allows you to consume non-organic sugar, you may find the following information helpful:

  • All products are dairy-free (coconut milk is used instead of cow’s milk)

AFBC does not offer any grain-free products. All the products we use are gluten-free, but NOT grain-free.  We DO NOT use almond or cassava flour.

While we love to accommodate dietary restrictions, our focus is on avoiding allergens rather than supporting other specialty diets. AFBC does not bake for Paleo, Whole30, AIP, Keto, or GAPS diets. Our products contain gluten-free grains, refined sugars, potato (starch and flour), and canola oil, which are not compliant with these dietary programs.
